01 THE IDEA

Nick's core insight is that co-manufacturers commoditize your product by forcing you to use their existing ingredients and processes, while also learning your secret sauce. By owning manufacturing, you can produce genuinely differentiated products, iterate rapidly, and build a moat that large CPG companies won't replicate below $300M in annual revenue. This is the contrarian play: most founders avoid manufacturing as 'too hard,' which is exactly why it creates durable competitive advantage.

The opportunity is to identify a saturated food category (proof that demand exists), find a product innovation that co-manufacturers literally cannot or will not produce, build a small-scale factory (ideally starting in a commercial kitchen or condo as Midday Squares did), and layer a media-forward brand on top. The manufacturing complexity filters out competitors, the brand drives premium pricing, and the wholesale/retail revenue becomes as predictable as SaaS MRR. This is a long-horizon business (20-30 year vision) and requires significant upfront capital, but the moat and margin profile are exceptional.
